HOW TO SERVE

Built to be enjoyed warm. It is at its best as nurukan, gently warmed to around 40 to 45°C, where the sweetness rounds out and the rice character opens up. Warming genuinely transforms it, so it rewards a little care: heat it gently and never to a hard boil. It will also drink happily at room temperature for guests who prefer it.

• Grilled and oily fish such as mackerel, salmon, or sardine
• Mushroom dishes, and simmered or braised plates
• Yakitori, oden, and warming izakaya-style cooking
• Rich, savoury, umami-led winter food
